Double chocolate muffins

These chocolaty muffins are made with ripe bananas and Flourish Protein Pancake & Waffle mix.  Not only are they sweet and delicious, they're also packed with protein and no butter or oil!  Perfect for breakfast or an afternoon snack.

Ingredients:

  • 2 super ripe bananas
  • 3 eggs
  • 1/4 c apple sauce
  • 1/4 c almond butter
  • 1 c coconut flour
  • 1 c Chocolate Flourish Protein Pancake & Waffle Mix
  • 1/4 c cocoa powder
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 c chocolate chips (I use mini chips)

Directions:

  • Preheat oven to 350 degrees Fahrenheit
  • Mix bananas, eggs, apple sauce, almond butter together, set aside
  • Mix dry ingredients together
  • Add the dry ingredients to the wet and mix thoroughly
  • Pour into muffin tins or cups (I love my silicone muffin holders)
  • Top with sliced banana or extra chocolate chips
  • Bake at 350 for about 20 minutes, or until a toothpick comes out clean
