Double Chocolate Muffins
These chocolaty muffins are made with ripe bananas and Flourish Protein Pancake & Waffle mix. Not only are they sweet and delicious, they're also packed with protein and no butter or oil! Perfect for breakfast or an afternoon snack.
Ingredients:
- 2 super ripe bananas
- 3 eggs
- 1/4 c apple sauce
- 1/4 c almond butter
- 1 c coconut flour
- 1 c Chocolate Flourish Protein Pancake & Waffle Mix
- 1/4 c cocoa powder
- 3 tsp baking powder
- 1/2 tsp salt
- 1 c chocolate chips (I use mini chips)
Directions:
- Preheat oven to 350 degrees Fahrenheit
- Mix bananas, eggs, apple sauce, almond butter together, set aside
- Mix dry ingredients together
- Add the dry ingredients to the wet and mix thoroughly
- Pour into muffin tins or cups (I love my silicone muffin holders)
- Top with sliced banana or extra chocolate chips
- Bake at 350 for about 20 minutes, or until a toothpick comes out clean
