Homemade Macaroni & Cheese

Ok, this recipe was given to me by my mother. I'm honestly not sure where it came from, but its certainly a keeper. I will say that I've made this recipe with whole milk verse evaporated, and my family could tell. I won't make that mistake again...Also I always use a block of cheese and grate it myself, rather than buy shredded cheese. It also seems to make a difference.
Ingredients:

- 2 cups macaroni noodles
- 1/2 cup evaporated milk mixed with 1/2 cup water
- 1 1/2 (12 oz) packages of mild cheddar cheese.
- 2 tablespoons of butter
- 2 tablespoons of flour
Directions:
- Cook pasta according to directions
- Shred cheese using a cheese grater
- Spray a glass baking dish with olive oil & set aside
- Preheat oven to 350 degrees Fahrenheit
- Once the pasta is cooked, set aside and start the sauce
- Melt the 2 tbsp of butter in a medium saucepan over medium/low heat
- Once melted add the flour and thoroughly mix
- Add the milk/water combo, mix thoroughly then add the cheese
- Stirring constantly over low heat until all of the cheese is melted and there are no lumps
- Add the noodles and mix everything together
- Pour into prepared pan and bake for 20-25 minutes
I'm telling you, this recipe is a winner! My husband isn't a big cheese fan, but he absolutely loves this macaroni & cheese recipe. LMK if you try it!
