Macaroni & Cheese

 

Ok, this recipe was given to me by my mother.  I'm honestly not sure where it came from, but its certainly a keeper.  I will say that I've made this recipe with whole milk verse evaporated, and my family could tell.  I won't make that mistake again...Also I always use a block of cheese and grate it myself, rather than buy shredded cheese.  It also seems to make a difference.

Ingredients:

Cheese
  • 2 cups macaroni noodles
  • 1/2 cup evaporated milk mixed with 1/2 cup water
  • 1 1/2 (12 oz) packages of mild cheddar cheese.
  • 2 tablespoons of butter
  • 2 tablespoons of flour

Directions:

  • Cook pasta according to directions
  • Shred cheese using a cheese grater
  • Spray a glass baking dish with olive oil & set aside
  • Preheat oven to 350 degrees Fahrenheit 
  • Once the pasta is cooked, set aside and start the sauce
  • Melt the 2 tbsp of butter in a medium saucepan over medium/low heat
  • Once melted add the flour and thoroughly mix
  • Add the milk/water combo, mix thoroughly then add the cheese
  • Stirring constantly over low heat until all of the cheese is melted and there are no lumps
  • Add the noodles and mix everything together
  • Pour into prepared pan and bake for 20-25 minutes

I'm telling you, this recipe is a winner!  My husband isn't a big cheese fan, but he absolutely loves this macaroni & cheese recipe.  LMK if you try it!
