Oatmeal w/ berries, nuts & almond butter
It's super cold in St. Louis and I've been craving a warm breakfast lately. I'm a big overnight oats fan, and I love oats in general. Oatmeal is a filling and satisfying breakfast that can be customized to your liking. Lately I've been enjoying it with berries, walnuts, cinnamon and almond butter.
Ingredients:
- 1/3 c old fashioned oats
- 2/3 c water
- 1/4 c blueberries, or any fruit you like
- 1/4 c walnuts
- 1 tbsp almond butter
- Sea salt
- Cinnamon
Alternate ingredients:
- Peanut or cashew butter
- Almonds, pecans
- Bananas, raspberries, strawberries, apples, raisins
- Protein powder (mix with the water and oats before cooking)
- Egg whites (mix with the water and oats before cooking)
Directions:
- Mix oats and water in a microwave safe dish
- Microwave on high for 2 minutes and 20 seconds
- Let sit for a few minutes after the time is up
- Stir in the cinnamon and sea salt. I just use a dash of salt and maybe 1/4 tsp of cinnamon
- Add berries, almond butter and nuts
