Spaghetti and Garlic Bread
(This picture shows the sauce without meat, and with meatballs instead)
Spaghetti is a fan favorite at our house. I feel like there are few dinners that all three boys like, as well as my husband and myself. When I find one that works I keep it in the rotation. This one is not homemade, because who has time for that during the work week? I do add extra veggies and herbs to make it taste a bit more homemade, and its a good way to sneak in more vegetables for your kids!
For the sauce:
Ingredients:
- 1 jar of organic Tomato & Basil pasta sauce (from Aldi)
- 1 can of tomatoes
- 1-2 zucchini chopped (or your choice of veggies)
- 4-6 chopped garlic cloves
- 1/2 an onion chopped
- 1 pound organic ground beef, 90% lean
- Oregano and Basil to taste. I don't measure these out, but probably add about 1/2 tsp of each.
- 1-2 tablespoons Olive Oil
Directions:
- Add the olive oil and heat over low to medium heat
- Add the garlic and saute for about a minute
- Next add the ground beef and cook until its almost cooked through
- Add the chopped onion and any extra veggies you like
- Cook for 3-4 minutes, stirring frequently
- Add the jar of pasta sauce & the can of (drained) tomatoes
- Mix everything together and cook on low/medium heat for about 15 minutes
- After 10 minutes of cooking the sauce, add the oregano and basil
For the Garlic Bread:
I buy a loaf of french bread from Aldi, then slice and freeze the bread into individual portions.
Ingredients:
- French bread
- 1/3 cup Butter (really depends on how much bread you're toasting)
- 4-6 chopped garlic cloves
Directions:
- Defrost the frozen bread
- Mix butter with chopped garlic
- Spread evenly on the sliced bread
- Toast in the toaster oven until slightly browned
Pair with your favorite pasta and you're all set!
