What do I eat?

I get a LOT of questions about food, what I eat, how many calories I consume each day, etc.  I had never tracked my food until about three weeks ago.  I'm currently doing a 30 day challenge with @iheartmacros which is basically a 30 day cut.  I'm eating a low fat, low carb, high protein diet.  I try and stick to whole foods and minimize processed foods.  That being said, that doesn't mean that I NEVER eat processed or fast food, but I definitely make a conscious effort to avoid them.  Here's a breakdown of things that I like to eat each day.

 

Breakfast Food

Breakfast:

I absolutely love overnight oats.  I blend old fashioned oats with unsweetened vanilla almond milk, cinnamon, Drink Orgain Chocolate Fudge Protein Powder, chia seeds, walnuts, and almond butter.  Check out a previous blog post for the entire recipe.  I also like plain greek yogurt with berries and homemade granola.  On the weekends I'll eat Kodiak Cakes Blueberry Waffles, or oatmeal with raisins, apples and cinnamon.  I typically have 2-3 cups of coffee in the morning.  I also love scrambled eggs with extra egg whites, English Muffins, and turkey sausage.

Lunch:

My new work schedule has me in the office Monday through Wednesday and I work from home on Thursday and Friday.  So I only need to prep lunches for three days.  I rotate between eating salads and leftovers.  Lately I've been making salads for the first three days of the week when I'm in the office.  My salad is usually made up of the following ingredients: arugula, spinach, asian blend of lettuce (comes with dressing), peppers, carrots, cherry tomatoes, cucumber, corn and avocado.  For protein I like hard boiled eggs or chicken. If we have leftover steak I'll add that in.  I HATE wasting food.  We always eat leftovers at our house.  I also always eat a side of fruit.  I try and eat as many colors as possible.  

Dinner: 

Baked chicken thighs

My husband and I take turns cooking dinner each night.  We eat lots of chicken breasts and thighs, salmon, lean ground beef, white rice, sweet potatoes, steamed broccoli, frozen vegetables.  We keep it pretty simple and rotate the same 7-10 dinners each week.  We will also get takeout from the family restaurant, which is usually pho for my husband and I and fried rice for the kids.  For a while we were having pizza nights on Fridays, but I've tried to stop ordering it every Friday and space them out a bit more.

Snacks:

 

At work I always keep a stash of mixed nuts, yogurt, fruit or some kind of protein bars.  I love the mountain trail mix from Aldi, mainly because it has M&M's in it.  Their Skyr Icelandic yogurt is amazing and has 15 grams of protein per serving.  As for bars, Built Bars are absolutely delicious and taste like a legit candy bar (use code FITMOM).  I also like Cliff Bars and Larabars.  I really only drink coffee, tap water, La Croix, Kombucha and occasionally I'll drink something with alcohol in it.  I love IPA beer, but almost everything with alcohol makes me feel terrible and hungover.  I rarely drink.  After dinner most nights my husband and I will watch a show together and I'll either have Angie's Kettle corn or a small bowl of ice cream.  I like Aldi's specialty ice creams, especially the brownie cookie-dough one.
